Tell us a little about your business. What do you offer, and what makes it unique?

Happy Panini offers gourmet hot-pressed sandwiches, pastas and milkshakes. Our commitment to high quality healthier ingredients includes all natural turkey breast, house cooked Angus Beef, 100% hand sliced meats and cheeses, scratch made sauces and of course our clean, 3 ingredient sourdough that is sourced locally from The New World Bakery in Kyle Texas. This makes us unique in that we offer our guests craveable food, healthy portions at affordable prices.

How did your journey as a business owner begin? What inspired you to get started?

In 2020 the pandemic brought a layoff to a single income family of 6. We saw this as an opportunity to leverage our decades of food service experience and our passion for serving others. Problem was, this was all during the chaos of the pandemic. We inspired, dared and vowed to support each other in this crazy journey toward launching our food trailer business. 

How long have you been in business, and why did you choose Hutto as your home base?

We've been in business for 4 and a half years, and have lived in Hutto for over 20 years. Where better to launch our first location. 

What’s been one of your most memorable moments as a business owner?

Being nominated for best food truck was pretty amazing, and while there have been many memorable moments, the most memorable still remains each early morning when we arrive at 202 Farley St, open the front door and turn the lights on for our small but amazing business. 

What do you think makes the Hutto community special?

We come from a big city background where trust, neighborly smiles and generosity were few and far between. We learned that the people of Hutto have made this possible and so special for us.

What advice would you give to someone just starting a business here?

Take that dream, make a written plan, then take the LEAP! Remember no one can do this alone, so network, don't be afraid to ask for help along the way. Persistence is king.

When you're not working, where can we find you around town? (Favorite coffee, food, or hangout spots?)

You can find us at work most any day and anytime of the week. If we're not at 202 Farley St, you would likely run into us early mornings at either HEB, or the drive thru of Baked'nSconed.
